At the turn of the 20th century, the music of "rag-time" filled the air...and spicy rye cocktails filled the glass. Back then, rye was a bartender's go-to for cocktails, mostly because it paired well with so many elements and flavors. But the musical genre soon lost out to jazz, just as rye fell in favor of bourbon and Scotch. And then Prohibition hit and, as you know, screwed up a lot of good booze tradition.
Long before launching New York Distilling Company, Allen Katz was known as a master bartender and spirits expert. Knowing rye's history, and seeing its comeback on the American bar scene, Allen decided their first whiskey would be a rye – this spicy spirit distilled from non-GMO rye grown on Pedersen Family Farms in upstate New York, rounded out by corn and barley. The whiskey's aged for at least three years in lightly charred American oak barrels, for incredibly bold spice, a light caramel sweetness and an oaky smooth finish.
