Gochujang. You might not yet know how to pronounce it (it's go-choo-jahng), but once you actually have a taste, your mouth will be too overwhelmed to form words – and you'll forget the "S" word ever even existed.
This sauce is like a slightly more-intense older sibling, with the consistency of honey or barbecue sauce and a deceptively deep sweetness up front (we detect apple) that blooms into a smooth heat. Plenty of garlic adds a strong savory note. It's bold, but not overwhelming. Seriously, we eat it with a spoon.
