Just a few miles down the road from Willa’s bakery in Goodlettsville, TN, there happened to be a couple hives tended by an earnest beekeeper. When the bakery was looking to expand its product line, it was start of a bee-utiful collaboration. Each of these quarter-sized coins of shortbread has a touch of that local Middle Tennessee amber honey in it. And as Willa’s points out, the wildflowers in the area change seasonally, so the cookies also change ever-so-subtly. The rich butter base of these cookies is sweetened with just a kiss of floral sweetness, a taste of the rolling hills that surround the company’s bakery.

The only problem with the little unassuming cookies? They’re bite-sized. So we can (and do) pop countless coins into our Mouths without realizing that we’ve nearly finished half the box. Guess we should say bee-ware of how addicting these shortbreads are.

Tip of the Tongue:

These shortbread are so perfectly buttery and balanced that it’s our favorite way to end the day, a cup of herbal tea with several stacked on the saucer. We also like them alongside a glass of Tennessee whiskey, when we are in the mood for a little buzz.
