The folks at Finger Lakes Distilling love whiskey, but they were really intrigued by the versatility of un-aged versions. (We're pretty interested in un-aging, too!)
White Pike is smooth but flavorful, because it's made from a blend of corn, malted barley and (rarely distilled) spelt. You'd never mistake it for vodka, yet you can use it in all kinds of drinks where aged whiskey would be all wrong. Behold, a whiskey that's versatile for mixing in cocktails but still interesting enough to sip straight. A win-win. And of course, we love that it's made using only local grains and water.

To earn the name of whiskey, grain spirits must go into a wooden cask for some period of aging. White Pike spends less than 18 minutes, meeting the legal definition, but holding true to its identity as an un-aged (aka white) whiskey.
