This white chocolate bar is anything but vanilla. Reminiscent of caramel-esque dulce de leche, the rich couveture is handcrafted with Los Bejucos — Dominican Republic cocoa butter. Made in small batches, and combined with cane sugar, milk powder, vanilla beans and salt, it’s easy to see why it walked away the winner of USA Silver in the 2013 International Chocolate Awards, and was a Finalist for the 2014 Good Food Awards. This Catskill company’s search to raise the bar on white chocolate has really come to fruition.
Tip of the Tongue:
Take a cue from pastry chefs, by roasting shaved bits of chocolate in a 375F oven. It will underscore its velvety brown butter notes, and make an awesome topping for ice cream, or a decorative element on cakes.
