If you love cheddar but are looking for something a little different, well, honey, this is the cheese for you!

It may sound complicated, but Tekenink (pronounced tea-key-neek) Tomme is simply delicious. It's really a hybrid between nutty, chewy Alpine-style cheeses and your fave sharp cheddar.

We love the creamy taste and granular-yet-smooth texture, which is broken up by little crunchy crystal-like deposits (formed as the cheese aged) that burst with flavor, kind of like a little sprinkle of flaky salt on top of a smooth, buttery caramel. FYI: The more a cheese is allowed to age, the more of these almost crispy clusters you'll find.

It's no surprise that this cheese won the ACS 2011 Gold and 2012 Bronze medals.

Tip of the tongue

Serve this golden, semi-hard cheese alongside The Real Dill's Caraway Garlic Dills. Use a cheese grater or microplane to shave over mushroom ravioli or ricotta-stuffed shells.
