Smoky Eggplant Tomato Sauce
Our favorite Italian Nonna has done it again! For a night when dinner needs to take 10 minutes, but taste like it took three hours, this smoky, earthy sauce is molto bene. Made in small batches with 100 percent local Jersey tomatoes.

Serve with Sfoglini's Porcini Pasta Trumpets or Baia's Whole Spelt Gemelli for an out-of-this-world pantry dinner. Or use as a base for "eggs in purgatory": Heat up a jar's worth in a skillet, crack in 4 to 6 eggs and simmer covered over low heat until the whites are firmly set. Serve with crusty bread. Everyone will love you.
