Dear North is owned by Alaska natives with ancestral roots in Glacier Bay, a 3.3 million acre National Park with rugged mountains, tons of wildlife and, you guessed it, glaciers. To make these tender, protein-packed (15 grams – no kidding!), omega-rich bites, they wild-catch Coho salmon in Alaska’s clear, cold, overfishing-protected waters. The filets are cut into bite-size pieces, smoked, infused with an umami-packed brine of soy sauce and mirin, then tossed in crunchy sea kelp and sesame seeds.
It’s a little more moist than typical jerky (no chemical additives, preservatives, dyes or colorings!) and will melt in your mouth like fresh fish. What a catch.
