Speculoos obsessives, rejoice! Little Belgian’s Saint Nick cookies are back and just in time. For those not already familiar with or enamoured by this cookie, the distinct speculoos taste comes from a blend of spices including cinnamon, cloves, pepper and cardamom. (If that’s not a holiday cookie, well, we don’t know what is.) The origins are actually pretty cool – the name “speculoos” comes from the Latin word for mirror, and each cookie is traditionally the mirror image of the mold its made with. Little Belgians creates their speculoos cookies in a Saint Nick shape that’s almost – almost – too beautiful and classic to eat.

These limited offering, ten-inch Saint Nick-shaped cookies are absolutely asking to be the star of your stocking stuffer show this year. Or teacher gift. Or Secret Santa. Or...breakfast! We do find (after extensive research) that they pair deliciously with a morning cup of coffee or tea, with just the right amount of crunch and a not-too-sweet flavor.
