Art in the Age calls this a "garden gin" and says it's inspired by the infusions that land-owning colonial settlers would steep way back in the day.
Along with the sage, they throw thyme, rosemary, lavender and fennel into the mix for a refreshing blend of all things fresh, floral and herbal. It's not technically gin (no juniper), but that's a great starting point for using it in cocktails.
