Rhum Agricole = French for cane juice rum. This bottle from High Wire is developed in the true style of the famous French West Indies rhum makers. It’s distilled at a very low proof from the juice of fresh-pressed sugar cane then barrel rested for 12 months. The result is a light amber spirit that’s satisfyingly earthy, sweet and smooth.

It's got a sweet nose, with some grassy funk and hints of plantains. The flavor is surprisingly fresh given the rest time. Very complex, with floral and green tropical notes. Do you get unripe pineapple, too?

High Wire Distilling Company is based in downtown Charleston, South Carolina and is dedicated to making super premium, handcrafted spirits. Their approach is simple: source the finest ingredients available and create recipes using a culinary approach. Scott Blackwell, head distiller, is a Culinary Institute of America-trained baker so he knows his grains and how to work with them. 

Only 164 bottles are produced each year (translation: it’s very rare) and released for a limited time during the holidays. Get yours before it gets away….a votre santé!
