Prescott

MADE BY ROBINSON FARM IN HARDWICK, MASSACHUSETTS

MOUTH SAYS...

Just the name of this cheese sounds debonair. Sturdy. Dependable. Yes, Prescott is a cheese that gets the job done, and maybe wins a few accolades along the way (like, say, the World Cheese Award, 2012).

Firm, nutty and almost mildly sweet, this cheese will never let you down, whether you're having an emergency-level craving for grilled cheese (did we mention it melts beautifully?) or are scrambling for a crowd-pleasing option for your cocktail party cheese plate.

Tip of the tongue

The great thing about a well-balanced cheese is you can either dress it down or spice it up. We happen to especially love it with a healthy smear of Bonnie's Black and Blue Jam – a virtual Mouth road trip to Massachusetts.

ingredients

Raw cow’s milk; animal rennet; aged 9 months to 1 year; comes in an 8 oz wedge.

*Treat your cheese right! Store it in the fridge tightly wrapped in wax or parchment paper. Take it out and let it warm up to room temperature before serving (about 30 to 60 minutes before). Happy tasting!
