Zuke, there it is! Rounds of bright green zucchini take the place of the expected cucumbers, in these sweet and summery pickles. And a simple brine — made from apple cider vinegar, cane sugar, fresh ginger, garlic, and sea salt — really allow the seasonal squash to shine. The forward-thinking provisions actually sprang into being during Covid, when the makers attempted to help small farmers, who were struggling to find places to sell fresh produce. These philanthropic and hand-packed pickles are giving us major #squashgoals.

Tip of the Tongue:

Sweet and tart zucchini slices make a fun and unexpected addition to antipasto salad, or a vegetarian panini layered with roasted red peppers, grilled eggplant, fresh mozzarella and pesto.
