And the flavor of these pickled red onions is just as bright. A little bit sweet, a little bit sour, and there's even a touch of heat (courtesy of some sneaky crushed red pepper), you won't be able to get enough. Though red onions may not be standard pickling fare, they'll be a welcome addition to your fridge.

Splash a little brine onto fresh oysters instead of mignonette. Mix into garlic mashed potatoes. Or take your traditional dirty martini for a spin with a sweet-sour pickled martini.
