When brewing loose-leaf tea without a strainer, pyramid-shaped tea bags are your best bet. The shape and extra breathing room allow each full dried tea leaf to expand and unfurl once the water hits, with enough surface area to guarantee total flavor extraction. You can reuse tea bags at least once more for a slightly weaker yet still totally delicious brew.

Black teas can handle hotter brewing temperatures and longer infusions – in fact, just-boiled water is necessary to bring out all the characteristic, subtly sweet flavors in each leaf. Scout of Flying Bird Botanicals recommends pouring hot water over the tea, covering and steeping for at least 7 minutes (longer, if you think the spice is nice). Add a splash of cream or drizzle of honey for the quintessential comforting cup.
