A liqueur that tastes like pancakes with roasted apples? Yes, please! Finger Lakes Distilling starts with an apple brandy made with local apples. Then, they age it in oak barrels and sweeten it with local maple syrup.
It's nutty and sugary, but with some natural acidity from the apples and a nice warm base, thanks to the brandy. We're obsessed.

Use Maplejack in place of brandy for a festive riff on a Sidecar: Combine 1 oz Maplejack, 1 oz Fruitlab Orange Liqueur and 1 oz freshly-squeezed lemon in a cocktail shaker with lots of ice. Shake until very cold and strain into a chilled cocktail glass. Lightly dust with cinnamon.
