Madras Cooking Sauce

MADE BY SPICEMODE IN CHICAGO, ILLINOIS

REAL SIMPLE SAYS...

With the hot summer months over, it’s time to turn on the stove and make some hearty, home-cooked meals. This sauce makes it easy to recreate a dish from your favorite Indian restaurant.

MOUTH SAYS...

Warm, onion-y, creamy and spicy, this blast of deliciousness makes us feel like we're experts at Indian cooking. The tart sweetness of tamarind, the mild heat of ginger, the complex aromas of the spices and a more intense warmth of chile powder add up to a sauce that is waaaaaay more amazing than we thought any jarred sauce had a right to be!

This is a must-have for any busy human being (human doing?) trying to resist the lure of takeout.

Tip of the Tongue

For a classic take: Sauté with chicken breast cut into bite-size pieces, add tomato paste, then add coconut milk and let it simmer until it comes together (optional: Once it's simmering, stir in a couple handfuls of clean spinach leaves). Serve with jasmine rice or naan.
