Quite sweet and just a little smoky with lots of raisin, toffee, vanilla and spice flavors, this bourbon gets its rich depth from white Madeira wine.
It's part of High Wire's New Southern Revival Brand, a series of spirits celebrating the diverse agricultural traditions of the American South. Distilled from 100% non-GMO local heirloom corn (hence the sweetness), the bourbon is first aged in the traditional white oak barrels, then finished for 3 to 6 months in a Madeira Sercial barrel (aka a barik). The hint of that white grape wine creates a wonderful depth and complementary richness that we think adds the elusive "Wow, what is that?!" to our cocktails.

Try this is in a Creole Daughter (our indie-fied version of a Creole Lady) by kicking up the Madeira punch: Stir together 1 1/2 ounces Madeira Finished Bourbon, 1 1/2 ounces Channing Daughters Pazzo Madeira and 1 ounce City of Daughters Pomegranate Rose Grenadine in a mixing glass with ice, then strain into a cocktail glass.

Madeira is a fortified (neutral spirit added) wine made on the Portuguese islands of Madeira. The added spirit stops the wine's fermentation and cuts the sweetness a bit. Madeira is aged in large wooden casks called bariks, which are gently heated, sometimes just by placing them in the sun, for months or years. Over time, the wine oxidizes, creating Madeira's distinctive flavor and making it very stable once bottled.
