Our friends at Channing Daughters are always pushing the boundaries of traditional winemaking, but for this bottle, they turned their attention to one of the most traditional, respected winemaking styles: a Burgundy-style chardonnay.
The wine – made with 100% hand-harvested grapes from two vineyards in Bridgehampton, Long Island – is allowed to naturally ferment, and then gets aged in oak barrels for 20 months.
It's a gorgeous example of the style, with flavors of lemon curd, golden apple and pear, and fresh-baked brioche. Whether you're totally obsessed with traditional French Burgundy, or you usually favor an oakier, more fruit-forward Chardonnay, trust us, you'll want to try this wine.

Pair with all kinds of seafood, chicken, rabbit or pork. In summer, we love it with grilled shrimp; for spring and winter, it's amazing with roast chicken.

Wineries can use different kinds of oak to age their wines. French is some of the subtlest, while Slovenian gives a little more vanilla, and American adds the most potent flavor. Channing Daughters ages L'Enfant Sauvage in a mix of separate French and Slovenian oak barrels, then blends them together.
