When we set out to build our collection of indie spirits, there was a dilemma: We were determined to keep our products USA-made, but the much beloved tequila MUST be made in Mexico to be called tequila. We thought we'd have to do without, but then we discovered Hatter Royale from New Holland Artisan Spirits.
It's not distilled from agave; in fact, it starts out as white whiskey, infused with Centennial hops (the same kind of plant used in beer). Its clean, floral bitterness gives this whiskey a floral, herbal flavor similar to many non-aged tequilas. It sounds odd, and it sorta is, but in the best way.

So we're calling this one the Hoparita: Combine 2 oz Hatter Royale, 1 oz Fruitlab Organic Orange Liqueur, 0.5 oz lemon juice, 0.5 oz lime juice and 1 Tbsp. simple syrup in a cocktail shaker with lots of ice. Strain into an ice-filled glass rimmed with Amagansett Lemon Sea Salt, and the fiesta is on!
