"A food-friendly badass! Its medium body and bright acidity pairs with almost any meal, but especially shines with grilled asparagus and cold-poached salmon. And it's from California, not Austria."—Jeff, Spirits + Wine Manager

MOUTH SAYS...

This Grüner Veltliner is the most food-friendly wine, ever.

Dancing Coyote picks their grapes at two different intervals, which results in a luscious, acidic white with flavors of ripe stone fruit (peach, apricot) as well as brighter notes like green pepper and citrus. This wine also sees zero oak (100% of the juice is fermented in stainless steel barrels), which gives it a crisp, mineral finish.

Dancing Coyote is a family run, owned and operated vineyard located in a beautiful stretch of land in California’s Clarksburg appellation in Acampo. The warm summer days and cool nights make an ideal climate for wine grapes (brb, moving to Clarksburg). They use techniques such as cold fermentation and limit the influence of oak, which highlights the pristine fruit flavors the winery is known for.

The classic, food-friendly acidity in this Grüner makes it the perfect choice for seafood and vegetable-based dishes, as well as Thai and Vietnamese cuisine. But really, this wine looks good with everything.

You heard it here first, folks: Grüner Veltliner is the new little black dress.

tip of the tongue

Grüner Veltliner's intense acidity is what makes it so perfect to drink with food. Be sure to break out the cheese and crackers if dinner is going to take a while.
