Dancing Coyote picks their grapes at two different intervals, which results in a luscious, acidic white with flavors of ripe stone fruit (peach, apricot) as well as brighter notes like green pepper and citrus. This wine also sees zero oak (100% of the juice is fermented in stainless steel barrels), which gives it a crisp, mineral finish.
Dancing Coyote is a family run, owned and operated vineyard located in a beautiful stretch of land in California’s Clarksburg appellation in Acampo. The warm summer days and cool nights make an ideal climate for wine grapes (brb, moving to Clarksburg). They use techniques such as cold fermentation and limit the influence of oak, which highlights the pristine fruit flavors the winery is known for.
