Sweet cheeses! This silky double cream lasted all of 10 seconds on our tasting table. It’s buttery and, yes, sweet. When ripe enough (and allowed to warm up a bit outside of the fridge), Green Hill sumptuously oozes out of its thin, white rind.
Beneath the rind, the cheese is a deep yellow, almost orange color, because it's made from milk from happy cows that have enjoyed a healthy diet of grass. The beta carotene from the grass turns the milk orange.
Happy cows means a happy Mouth.
Tip of the tongue
Top the Green Hill with a light drizzle of Trubee Wildflower Honey, to keep it Southern. Pair with a Belgian Tripel ale to refresh your palate between mouthfuls.
