We go crazy for green garlic every spring at the greenmarket. But now, with these delicious pickles, it's spring all the time.
Like a scallion (otherwise known as the green onion), it's simply immature garlic. No we don't mean that it makes silly jokes all the time – rather, it's a long green shoot that grows before the bulb is formed, harvested when farmers thin their garlic beds. In other words, only available for a short time.

They're awesome on a charcuterie platter or relish tray. Thinly slice and stir them into mayonnaise for your burger, or thickly slice and mix into a potato, pasta or grain salad.
