This gin's a charmer. Seriously, how could you not love it? It's full-bodied, with a tantalizing blend of fruits, flowers, seeds and spices, and made on a biodynamic farm where most of the ingredients are grown.
We're crazy for its eucalyptus aroma, minty-fresh sweetness, supported by the quieter notes of juniper and citrus typical to most gins.
Its base is made from both organic Jonathan apples (which make the body nice and rich) from a nearby orchard, and organic Romanian winter wheat grown on site. The botanicals are the real deal: a blend of 12 different whole fruits, flowers, seeds and spices – no extracts or concentrates.
After distilling, it's brought to proof with water from the nearby CapRock basalt mountain rock formation at 11,000 feet elevation, which is considered some of the purest in the world. We're left with a pristine gin that's at once elegant, ethereal and earthy.

Highlight this gin's sweet minty flavors by mixing it in a Negroni variation: combine 1 ounce each of CapRock, Breckenridge Bitters and Uncouth Apple Mint Vermouth in a mixing class with ice. Stir and strain into a chilled cocktail glass and float a mint sprig on top.
