Juicy blackberries and fresh-from-the-pod vanilla come together in perfect harmony to create this sweet, aromatic spread that reminds us of blackberry picking, without those pesky thorns. Head jam-maker Lynnette Shaw preserves local fruit using (always vegan-friendly) fruit pectin and half the sugar of traditional recipes, so the texture and flavor of perfectly ripe blackberries shine through.

This is a go-to jam for spreading on scones or croissants, but if you're the baking type, try baking it right into a batch of scones. Divide your dough in half and pat each half into a circle about 8 inches across. Spread one thickly with jam and top with the other, then gently pinch the sides closed. Cut the circle in half, and then cut each half into 4 pie-shaped wedges. Follow your recipe directions to bake.
