This distinctive gin is flavored with just two ingredients: Juniper and raw honey. The northern honey is added just before bottling, so you really taste its floral flavors, which change depending on the type of blossom the bees harvest for pollen. So, this is truly a seasonal spirit.
Why honey? Caledonia Spirits started out as an apiary. Founder and head beekeeper Todd Hardie knew he needed to expand beyond honey to make his business really work. Some of Todd's relatives were distillers in Scotland, so he learned to make mead, which eventually led him to build a distillery on his farm.

Barr Hill Gin is lightly sweet so cocktail nerds might call it an "Old Tom" gin, a nearly forgotten style of gin with added sugar. Try it in pre-Prohibition style cocktails like the Martinez: Stir together 2 oz gin, 1 oz sweet vermouth, a teaspoon of Maraschino liqueur and 2 dashes orange bitters. Strain into a chilled cocktail glass and garnish with a lemon twist.
