Amberthorn Vermouth

What comes to mind when we hear "amberthorn"? Something honeyed, rich, smooth like amber, but with a little balanced kick from something herbal and bitter, in the best way.

So, we're completely obsessed with what Amberthorn Vermouth actually is – a complexly flavored, rich, herbal white vermouth. It all starts with a North Fork Chardonnay, infused with fragrant aromatics including anise, lavender, basil and citrus. A dose of apple brandy from upstate New York gives it a sweet warmth, plus a drizzle of raw honey. That honey gives it a soft, mouth-coating texture, but the hints of sweetness are beautifully balanced by the bitter and herbal notes of the herbs, zests and roots. 

Atsby founder Adam Ford was inspired by vermouths he drank in Europe, but rather than just imitating what had already been done, he set out to create a truly New World vermouth. Indeed, it makes an inspiring cocktail, but we never have trouble finishing the bottle, because we'd happily sip it on the rocks every night before dinner.

We love to play up the apple notes in this vermouth by pairing it with more apple brandy. Combine 2 oz Amberthorn Vermouth, 3/4 oz apple brandy, 1/2 oz freshly squeezed lemon juice and a dash of lavender or celery bitters in a cocktail shaker with lots of ice. Shake until very cold and strain into a chilled cocktail glass.

Vermouth is only 16% alcohol by volume, so it won't last forever once you've cracked that bottle open. We definitely recommend keeping it in the fridge and drinking it up within a few weeks.
