This is a complex hunk. A nice middle ground between a soft chevre and stinky blue on your cheese plate, this semi-firm cow's milk cheese is sweet and tart, but also toasty and oniony. Plus, it's great for melting.
Of course, we also love the name, a totally cheesy (ha!) take on the oh-so-traditional, fit-for-fondue French Alpine cheese Abondance, which inspired A Barndance.
