We’re loco for Öko Caribe, a cocoa-farming cooperative in the Dominican Republic, who provide the malty, nutty, honey-flavored cocoa beans that make up this chocolate bar. We also appreciate that Twenty-Four Blackbirds pays as much attention to craft as they do to sourcing. For instance, ingredients are refined in a traditional stone melangeur (a type of grinder), before being tempered, and molded by hand. The bite-sized bars are prepared in small batches with no emulsifiers or additives...talk about a consummate confection for the most discerning chocoholic.
