Brunchaholics, listen up. Mark today down in your calendar. No, perhaps it’s not quite as life changing as when bottomless brunch was first invented, but it’s still a one for the ages. Congratulations – today's the day you discover Chai French Toast.

The natural flavors of chai tea (cinnamon, cardamom, fennel, star anise) make such a spicy sweet combo with the doughy, buttery pillows of bread, especially when doused with a healthy amount of maple syrup. It’s such a meant-to-be flavor mash-up, we’re just not sure why we didn’t think of it sooner.

Your chai latte just met its new BFF:

Chai French Toast

1 cup Dona Chai Concentrate
½ cup whole milk
1 tablespoon sugar
¼ teaspoon salt
6 slices challah (1-inch thick each)
4½ tablespoons unsalted butter
Maple syrup

Directions
  1. Preheat oven to 400°F.
  2. Whisk together Dona Chai, milk, eggs, sugar and salt in a bowl. Pour into a sheet pan, then add bread and soak, until bread has absorbed liquid.
  3. Heat 1½ tablespoon butter in a 12-inch nonstick skillet over medium-high heat.
  4. Transfer slices to skillet and cook, turning once, until slightly puffed and golden brown. Place on a large baking sheet. Repeat this process until each of the slices have been seared, adding 1½ tablespoon butter between batches.
  5. Finish in the oven. Toast should be golden and firm to the touch, about 8 minutes. Serve immediately.
