Patricia Tsai wants her customers to experience pure chocolate "as the ancient people in Mesoamerica did thousands of years ago."  Her bean-to-bar chocolates, made at her small factory and tasting room in Culver City, California, are stone ground using a tool similar to a mortar and pestle and flavored with with whole nuts, dried fruit and spices for bars with exceptionally pure flavors. Those Mesoamericans were clearly onto something!
