Lon Baley and Mark Trotman, co-owners of Baley-Trotman Farms in Malin, Oregon, make their living farming potatoes, alfalfa, grains and wine grapes. But a few years ago, Lon took a trip to Mexico where he spotted pickled potatoes on an olive bar. He was intrigued, and once he'd tasted them, totally inspired. He tried to find one back home, and realized that no one was making jarred, pickled potatoes. As a potato farmer, he felt a personal responsibility to bring this delicious, unique product to potato-lovers everywhere. We're so glad he did!
