Dr. Pat Elliot started out with just a border collie and an idea. The dog needed something to do, so Pat bought some sheep. But then the sheep needed something productive to do, so Pat decided to start milking them, and making cheese.

Today, Everona Dairy in Virginia is owned by Pat's son, Brian Wentz, and his wife Carolyn, who is master cheesemaker at the farm. Pat passed away in 2013, and Brian and Carolyn are ardently carrying her vision forward, producing award-winning sheep’s milk cheeses that are aged, washed-rind and unpasteurized.
