Who knew you could pickle dried mushrooms? Pickle-maker Emiliana starts out by plumping organic dried shitake mushrooms in water. Next, she makes her brine from organic soy sauce, sugar, ginger, sherry vinegar and the mushroom liquid. Simple and incredibly delicious, these unusual, Asian-inspired pickles make a great gift for any pickle fan.

Thanks to the soy, these mushroom slices are little umami-bombs. A great addition to all kinds of salads, we also like to add them to a grilled cheese made with rye and swiss.
