Raspberry & Hibiscus Marshmallow CookieMADE BY MALVI IN ATLANTA, GEORGIA
Food & Wine Magazine Says...
Think modern Moon Pie, but with right angles, ample pillowy pink ever-so slightly tangy marshmallow and a tender, deep chocolate shortbread cookie. –Tina Ujlaki, Executive Food Editor
Laura Curtis calls her marshmallow sandwich cookies "malvis," from malvavisco, the Spanish word for marshmallow. She was inspired by toasty s'mores and summer campfires on Lake Michigan, but she picked up her technical skills at the Culinary Institute of America, and then working as a research and development chef for a large supermarket chain.
