Mike, aka the "Sauce Boss," is obsessed with spice and flavor, which explains why he crafts hot pepper sauces with locally sourced, farm-fresh ingredients. Mike achieved complex depth here by blending roasted and fresh jalapeños. We love the slightly sweet flavor punctuated by bright lime and, of course, a little heat on the way down. It's like the best, smoothest salsa, sans tomato.

With the help of Chicago-area kids, Co-Op Sauce brews, bottles and sells its line of sauces to fund their arts education program, Co-Op Image.

Taco night will never be the same – this goes with everything from fried fish to marinated pork belly, from raw radish to salty cotija cheese. Add to ground hamburger before shaping into patties, then top with extra-spicy pepper jack cheese.
