Seattle's Skillet Street Food is totally chef-driven. Seriously driven – Chef Josh Henderson started out at the wheel of an Airstream trailer, peddling his modern American street food (and, gasp, bacon jam!) with smartly conceptualized flavors.
And Josh understands the pure joy and responsibility that comes with the power of spreading bacon on anything and everything. He's added floral fennel and a good sprinkling of cracked black pepper to an already meaty, savory, flavorful condiment.
Spread, spread away.
Spread this bacon-osity on bratwurst with a little Tin Whole Grain Mustard. Stuff kalamata olives for an aromatic appetizer with black pepper heat.
Bacon (pork, water, salt, sugar, sodium phosphate, sodium erythorbate, sodium nitrite, smoke), onion, apple cider vinegar 50 grain (juice from apples, water), dark brown sugar (sugar, invert sugar, cane molasses), lemon juice, fennel, black pepper, salt, soy lecithin, citrus flour, granulated garlic, pectin. Comes in a 7 oz jar. Refrigerate after opening.
(if not, how abouta ginger ale?)
