One of the many things our talented makers do so well is source creative ingredients local to their kitchens. Maybe you've heard of candy caps, a mushroom native to California’s Bay Area. Well, once dried, they taste like mellow maple syrup, perfect for balancing sweets.
Little Apple Granola hand-presses juice from organic apples, which gets boiled down into concentrated apple syrup for the base of the caramels. It takes 40 pounds of apples to get just 1.5 gallons of syrup!

These caramels pair perfectly with fruit, so top a thick slice of pear or apple with one caramel and some crushed peanut for a grownup take on classic fall fair food.
