Know what really gets our goat? A lack of a really good, funky, firm cheese that's made from goat's milk. Happily, we found this assertive, beer-washed beauty. Beneath the smelly, gritty orange rind (and we mean all these adjectives as a compliment!) is a bright white cheese that's pleasantly nutty and juuusst goaty enough – creamy, meaty and grassy, but also a little sweet and almost peppery, too. 

It’s a washed-rind cheese, which is code for cheese that gets a bath in brine, kind of like its good friend (on the cheese plate), the pickle. Brine helps attract "good" bacteria that give cheese its signature smelly flavor, and protect it from "bad" bacteria. And, in the case of Red Cloud, strain B. linens creates a distinct reddish color in the rind. 

Tip of the tongue

If you have foodie friends, bust out this cheesemonger's favorite at your next party. And this is one of the few cheeses that stands up well to a really floral IPA.

Cultured, raw goat’s milk; vegetarian rennet; aged at least 2 months; comes in a 7 oz. round. *Treat your cheese right! Store it in the fridge tightly wrapped in wax or parchment paper. Take it out and let it warm up to room temperature before serving (about 30 to 60 minutes before). Happy tasting!
