Ostrich? Yes.

Ostrich meat is low in cholesterol and calories with virtually no fat, and tastes more like beef than poultry. Todd at Roaming Acres Farms in NJ makes sure his birds are given only natural, local, vegetarian feed. He sells ostrich eggs and fresh meat to NYC chefs, but also makes some of the most delicious jerky around.

Todd can be found handing out samples of this smoky most days at the Union Square market. "The customer is someone who likes red meat and doesn't like fat. There's a learning curve, but once they try it, they typically try it again."

[Note: This is not an eating tip!] We thought you'd be interested to know that, contrary to myth, ostriches do not bury their head in the sand. When an ostrich senses danger and cannot run away, it flops to the ground and remains still with its head and neck flat on the ground in front of it. As the head and neck are light colored, they seem to blend in with the soil which makes it look like the ostrich has buried its head in the sand.
