There are hot sauces and then there are hot sauces. Harissa, the chili sauce born in North Africa, doesn't try to compete for the fieriest condiment in your fridge. Instead it marries flavor and heat, emphasizing the fruity, tangy-ness of its chile pepper base. Mina offers up a Moroccan version, first refined at her childhood home in Casablanca. She keeps it simple, adding just olive oil, a touch of garlic and vinegar to the chile base, balancing the blazing chiles with just enough bell pepper sweetness to lure you into another spoonful. 

Tip of the Tongue 

Surprisingly adaptable, Mina Harissa can be spooned onto scrambled eggs, mixed into mayonnaise or used as a dipping sauce with grilled chicken, beef or eggplant.
