Espresso & Apricot Oaties

Baking master Jesse Lomax Floyd has done it again. The newest of her cookies to hit our tasting table, an open bag does not last long around here. They are perfectly oaty without the dryness often associated with oat cookies. The apricots add a fruity, chewy but not too sweet flavor.
