Caramelized Onions

These luscious caramelized onions are so good you'll fall on the floor. New York white onions are slowly cooked with a little extra virgin olive oil for a couple of hours, giving them ample time to caramelize. The heat is then turned up, and red wine vinegar and brown sugar are added along with sea salt, freshly cracked pepper and thyme. Simple yet beyond delicious.

The onions are, of course, great on a steak or burger (beef, turkey, veggie). They add depth to soups and salads and are fabulous with a soft, ripe Brie. And here's a great summery salad – cubed watermelon, caramelized onions, feta, basil or mint, and a splash of Wolffer rose vinegar.
